Abstract

Vietnam, a tropical country, has abundance of fruit and vegetable. Wax gourd is a popular vegetable which can be found everywhere in any crops. Wax gourd has charactered by nutrient and pharmaceutical components, specially, its sweetness and its effects in urinating advantage, heart supporting, thermal resolving and oedema treating. Our research has determinated the processing of wax gourd beverage with nutural flavour including the extracting nutrient coponents and extracting flavour. Wax gourd beverage not only uses this profuse agricultural product, but also supplyments the industrial food market. Beside, it satiates consumer's requirement about natural healthy food.
