Abstract

Immobilized enzyme has many advantages in applications, however the production of immobilized enzyme depends on many factors. That is a topic for many scientists and reseachers. This topic is researching the ability of immobilization a-amylase by CMC Alginate complex carrier (support). The result obtained from this research is that the activity of enzyme Termamyl immobilized by gel CMC-Alginate is high at alginate 0.75%, CaCl2 6%; and the concentration of CMC (Carboxymethylcellulose) was 2%. The activity of immobilized enzyme is affected by substance, pH & temperature's reaction: The heat-resistance of immobilized enzyme depends on the carrier. The smaller its size is, the easier the substance comes into contact with immobilized enzyme. However the amount of immobilized enzymes decreases after the reuses. The activity of immobilized enzyme is down to half after being used 10 times repeatedly.
