RESEARCH SOME CHARACTERISTICS OF ENZYME β-FRUCTOFURANOSIDASE (β-Ffase) FROM Aspergillus
Abstract
To construct the manufacturing process of fructo-oligosacharide enzime (FOS) in the future, we carried out the following reseach stages : 1. Studying some types of Aspergillus to synthesize enzyme ß - Ffase. We seperated the stypes from agricultural products in Viet Nam and chose the types which have the ability to synthesize enzyme β- Ffase with high productivity. 2. Studying some conditions for culturing Aspergillus to have high producttivity of enzyme β - Ffase. 3. Studying some factors influencing hydrolytic ability enzyme β - Ffase to produce sucrose such as : pH, temperature, concentration of substrates, hydrolytic kinetics of substrates.
